I love buying cookbooks, online maybe too much because I sure have a lot of them! My husband teases that I buy them but never use them, medicine which is kind of true. One of my goals this summer is to try new things in the kitchen and use my cookbooks. ‘The Love & Lemons Cookbook’ is beautiful…so I thought I would test out some simple recipes…baby steps.
With summertime around the corner and last-minute visitors popping in and out of our home, I always like to have a recipe or two that’s easy to whip up with ingredients I already have. This past weekend, I re-created their signature lemony cocktail (but without the alcohol!) for more of a refreshing mid-afternoon drink. I’m looking forward to adding a bit of prosecco next time for that extra kick…!
For food, I chose the feta and ricotta toasts with peas, radish and mint. They were so easy to put together and the kids loved them! I was happy we made the drinks with no alcohol - Zoë drank three of them! Next up, I want to try Jeanine’s Avocado & Pomegranate Crostini because anything with Avocado…I’m sold!
This is a lovely cookbook….now it’s time to dig into the thirty other cookbooks I have sitting in a pile. There’s a lot of food to be made this summer. xx
